I grew up in Thailand, where meals are full of bold flavors, fragrant herbs and vibrant spices. Thai cuisine has always been energetic and expressive, but while learning about Japanese cooking, I discovered a completely different kind of flavor through kombu broth.
As I learned more, I discovered that the kombu used for Japanese dashi is carefully harvested from the cold seas of Hokkaido. It amazed me that such a quiet and elegant umami could come from something that grows slowly beneath the ocean.
At first, the flavor felt subtle. But after using it in soups, vegetables and home cooking, I realized kombu broth was never meant to dominate a dish. Instead, it gently brings every ingredient together and creates a calm, balanced meal.
Many of my friends are becoming interested in plant-based cooking and lighter meals. Kombu broth offers a natural way to add satisfying depth without relying on meat-based ingredients.
